E249: Potassium nitrite

Potassium nitrite cures meat and controls botulism risk, the same job as sodium nitrite. It is vegan and halal in itself, and carries the same nitrosamine question.

What E249 actually is

Potassium nitrite does exactly what sodium nitrite does: it prevents Clostridium botulinum growing in cured meat and fixes the pink colour. It is used less often, mainly where a manufacturer wants to keep sodium down, since the potassium salt delivers the same curing action without adding sodium.

Manufactured industrially, with no plant or animal input.

The additive itself contains nothing animal-derived. It appears almost exclusively in meat products, so the meat determines suitability.

Is E249 safe?

Everything true of sodium nitrite applies here, because the active part is the nitrite ion in both. Nitrite can react with amines in meat, particularly under high heat, to form nitrosamines, and the WHO cancer agency classified processed meat as Group 1 carcinogenic in 2015. It is still permitted because removing it would reintroduce botulism risk, which is a serious and historically real hazard. EFSA set an acceptable daily intake of 0.07 mg per kg of body weight per day for nitrite in 2017, and permitted levels in the EU were tightened in 2023. Ascorbate is normally added alongside because it suppresses nitrosamine formation.

Common questions

What is the difference between E249 and E250?
E249 is the potassium salt and E250 the sodium salt. The active part is the nitrite ion in both, so they cure identically. Potassium is used where a maker wants to reduce sodium.
Is potassium nitrite safer than sodium nitrite?
No. The nitrite is the same and so is the nitrosamine question. The only difference is which mineral comes with it.
Why is nitrite used at all?
It is the main control on Clostridium botulinum in cured meat. Botulism from cured meat was a regular killer before nitrite curing became standard.
Is E249 halal or vegan?
The additive is synthetic with no animal input. It appears almost only in meat, so the meat decides.
Does cooking make it worse?
High-temperature cooking favours nitrosamine formation, which is why frying cured meat until very crisp is generally discouraged.
