How to read an additive without the number

A pack does not have to print the E number. It can print the additive name instead, and it usually puts the job first, so you see wording like emulsifier followed by the name in brackets. United States labels skip the E system altogether, which is why the same emulsifier appears as mono- and diglycerides there and as E471 in Europe.

Two things are worth knowing before you judge a list. A long additive list is not automatically a worse product, and a short one is not automatically better, because sugar, salt, and saturated fat carry no code at all. And the number itself carries no ranking. E300 is vitamin C. E621 is MSG. They sit next to each other in the same system.
