What E250 actually is
Sodium nitrite is what makes bacon pink instead of grey, and more importantly it is what stops Clostridium botulinum growing in cured meat. Botulism from home-cured meat was a genuine and regular killer before nitrite curing became standard. It is one of the few additives doing a job that is directly about preventing death.
What it is made from
Manufactured industrially. In products marketed as uncured or naturally cured, the nitrite comes instead from celery powder or beet juice concentrate, which are naturally nitrate-rich and are converted to nitrite by a bacterial culture. The chemistry in the finished meat is the same.
Vegan, vegetarian, and halal status
The additive itself contains nothing animal-derived. It appears almost exclusively in meat products, so the meat, not the curing salt, is what determines suitability.
Is E250 safe?
This is the additive where the health question is real rather than folklore, and it deserves a straight answer. Nitrite can react with amines in meat, particularly under high heat, to form nitrosamines, some of which are carcinogenic. In 2015 the WHO's cancer agency classified processed meat as a Group 1 carcinogen, and nitrite curing is part of why. At the same time, removing nitrite would reintroduce botulism risk, which is why regulators have reduced permitted levels and required ascorbate alongside it, rather than banning it. EFSA re-confirmed an acceptable daily intake of 0.07 mg per kg of body weight per day in 2017 and noted that exposure from food additives stays within it, while total nitrite exposure including vegetables and water can exceed it for some children.
