E251: Sodium nitrate

What E251 actually is

Sodium nitrate is used where curing takes months rather than days. It does nothing by itself; bacteria in the meat convert it gradually into nitrite, which is the compound that actually preserves and fixes colour. That slow release is what suits it to dry-cured hams and hard salami, where a fast-acting nitrite would be spent long before curing finished.

What it is made from

Manufactured industrially. It occurs naturally in soil and, importantly, at high levels in leafy vegetables such as spinach, rocket, and celery, which is the main dietary source of nitrate for most people.

Vegan, vegetarian, and halal status

The additive contains nothing animal-derived. It appears almost exclusively in meat products, so the meat determines suitability rather than the curing salt.

Is E251 safe?

Nitrate itself is comparatively inert; the concern begins when it converts to nitrite, which can form nitrosamines in cured meat. EFSA re-evaluated nitrate in 2017 and set an acceptable daily intake of 3.7 mg per kg of body weight per day, and noted that exposure from additives stays within it while total exposure including vegetables can exceed it. That paradox matters: the same compound in leafy vegetables is associated with beneficial cardiovascular effects, while in cured meat it sits within the processed-meat classification the WHO cancer agency made in 2015. Context, not the molecule alone, drives the difference.

What is the difference between nitrate and nitrite?
Nitrate (E251) is slow-acting and must be converted by bacteria into nitrite (E250), which is the compound that actually cures. Nitrate suits long dry-curing; nitrite suits fast curing.
Is nitrate in vegetables the same as in bacon?
