What E433 actually is
Polysorbate 80 stops ice cream turning icy, keeps sauces from splitting, and disperses flavours through drinks. It is the more liquid member of the polysorbate family, which is why it suits frozen and liquid products where polysorbate 60 suits icing and toppings.
What it is made from
Sorbitol, oleic acid, and ethylene oxide. The oleic acid is usually plant derived, commonly from olive or other vegetable oils, but animal-derived oleic acid exists and the code does not distinguish them. Ethylene oxide is used in manufacture and is not present in the finished additive.
Vegan, vegetarian, and halal status
Oleic acid for polysorbate 80 is more often plant derived than the stearic acid used in polysorbate 60, but the code still does not guarantee it. A certified vegan or halal mark verifies the source. Like polysorbate 60, it is gluten free in itself, containing no wheat, barley, rye, or malt at any stage.
Is E433 safe?
This is the additive where the emulsifier and gut microbiome research actually centres, so it deserves a straight account. Work published from 2015 onward, led by Chassaing and Gewirtz, found that polysorbate 80 and carboxymethylcellulose fed to mice altered the gut bacterial community, thinned the protective mucus layer, and promoted low-grade intestinal inflammation and metabolic changes. A small human trial published later reported changes in gut bacteria with carboxymethylcellulose. This is real research being taken seriously, and it is also not a regulatory finding: EFSA re-evaluated the polysorbates in 2015 and set a group acceptable daily intake of 25 mg per kg of body weight per day, and no regulator has restricted them on this basis. Anyone with inflammatory bowel disease sometimes chooses to limit emulsifiers on their own judgement, which is a reasonable personal decision rather than official advice.
