E471: Mono- and diglycerides of fatty acids

What E471 actually is

E471 is the most widely used emulsifier in packaged food. It holds fat and water together, which is what keeps bread soft for longer, stops ice cream turning grainy, and keeps peanut butter from separating in the jar. Chemically it is a fatty acid attached to glycerol, which is the same basic structure as ordinary fat, just rearranged so one end likes water and the other likes oil.

What it is made from

Two starting materials are in commercial use. Most European and North American production runs on plant oils, usually palm, soybean, sunflower, or rapeseed. Some production, particularly outside those regions, uses animal fats such as tallow or lard. The finished molecule is identical either way, which is exactly why the label cannot distinguish them and why the code alone answers nothing.

Vegan, vegetarian, and halal status

This is the single most common source of confusion in additive labelling. A product carrying a certified vegan, vegetarian, halal, or kosher mark has already had the E471 source verified as part of that certification, so the mark answers the question and the code does not. Without a mark, the only reliable route is to ask the manufacturer. Plenty of large brands publish a standing answer in their FAQ.

Is E471 safe?

E471 is approved in the EU, the UK, the US, Canada, and Australia and New Zealand with no numerical limit on how much may be used, which regulators reserve for additives where intake is not a practical concern. EFSA re-evaluated it in 2017 and did not set an acceptable daily intake, concluding there was no safety concern at the levels food uses. The open research question is not toxicity but whether emulsifiers as a group affect the gut microbiome, and the studies driving that discussion have mostly looked at polysorbate 80 and carboxymethylcellulose rather than E471.

FDA (US)
Generally recognized as safe. Listed under mono- and diglycerides rather than an E number, because US labels do not use the E system.
FSANZ (Australia and New Zealand)
Permitted under the food additive code 471 with no numerical limit.

Common questions

Is E471 halal?
It depends on what the manufacturer used. When E471 is made from plant oils it is acceptable; when it comes from animal fat, the species and slaughter method decide. A halal certification mark on the pack means the source has already been checked. Without one, contact the maker.
Is E471 vegan?
Only when it is made from plant oil, and the code does not tell you. A certified vegan mark on the pack settles it, because vegan certification requires the source to be verified.
Is E471 the same as palm oil?
Not the same thing, but palm oil is the most common raw material for it. A product can therefore contain palm-derived E471 without listing palm oil separately.
Why is E471 in bread?
It slows down the staling process. Bread goes hard as starch recrystallises, and E471 interferes with that, which is why a packaged loaf stays soft for days longer than a bakery loaf.
Is E471 bad for you?
There is no established health concern at the levels used in food, and no regulator has set an intake limit. The ongoing scientific discussion about emulsifiers and gut bacteria has centred on other emulsifiers, not this one.
