What E120 actually is
Carmine is one of the oldest colours still in industrial use. It comes from the cochineal, a scale insect that lives on prickly pear cactus, and it produces a deep stable red that synthetic dyes struggle to match for richness. Roughly 70,000 insects are needed per kilogram of the dye.
What it is made from
Dried female cochineal insects, mostly farmed in Peru and the Canary Islands. The insects are dried and the carminic acid extracted, then usually converted to an aluminium salt to fix the colour.
Vegan, vegetarian, and halal status
Carmine is insect-derived, so it is not vegan. Most vegetarians avoid it too, though this varies by individual definition. The majority position among Islamic scholars treats insects other than locusts as not permissible, so carmine is generally avoided, and halal certification bodies typically exclude it. Kosher certification also generally excludes it. US labels must name it specifically rather than hiding it under a general colour term, which is unusually helpful.
Is E120 safe?
Carmine is permitted in the EU, UK, US, and most other markets. The recognised issue is allergy rather than toxicity: a small number of people have a genuine IgE-mediated allergic reaction to the residual insect protein, which can be severe. This is precisely why the FDA moved in 2009 to require carmine and cochineal extract to be declared by name on US labels rather than as artificial colour or colour added.
