What E621 actually is
MSG is the sodium salt of glutamic acid, an amino acid that occurs naturally in tomatoes, parmesan, mushrooms, soy sauce, and human breast milk. It delivers umami, the savoury taste that sits alongside sweet, salty, sour, and bitter. Adding it to food does not create a new flavour so much as amplify the savoury one already there.
What it is made from
Commercial MSG is made by bacterial fermentation of sugar sources such as sugarcane molasses, sugar beet, cassava, or corn starch. This is the same industrial process used to make citric acid and lactic acid. The original nineteenth-century method extracted it from seaweed broth; nobody manufactures it that way at scale any more.
Vegan, vegetarian, and halal status
Fermentation-produced MSG is suitable for vegan, vegetarian, and halal diets. The one point worth knowing is that the growth medium used for the bacteria has occasionally raised questions in strict certification contexts, which is why some certifying bodies check it. In ordinary shopping terms, MSG is not the ingredient to worry about.
Is E621 safe?
MSG is one of the most heavily tested food additives in existence. EFSA, the FDA, and the WHO and FAO joint expert committee have all reviewed it and permit it. The reputation problem traces to a 1968 letter in a medical journal coining Chinese Restaurant Syndrome, which spread widely before it was ever tested properly. Later double-blind trials, where neither the participant nor the researcher knew who got MSG, did not reproduce the symptoms in people who reported being sensitive to it. EFSA did set a group acceptable daily intake in 2017 based on high-intake modelling, which is a normal precautionary step, not a finding of harm.

- Is MSG bad for you?
- Controlled double-blind studies have not shown the symptoms it was blamed for. Regulators worldwide permit it. It does contain sodium, so it counts toward your salt intake, but at roughly a third the sodium of table salt by weight.
- Is MSG halal and vegan?
- Yes in normal commercial production, because it is made by fermenting plant sugars. The finished additive contains nothing animal-derived.
- Does no added MSG mean no glutamate?
- No. Yeast extract, hydrolysed vegetable protein, autolysed yeast, and soy sauce all carry free glutamate naturally. A no added MSG claim only means the pure additive was not added.
- Why does MSG have such a bad reputation?
