Sodium hydroxide is what makes a proper German pretzel taste like a pretzel. Dough is dipped in a dilute lye solution before baking, which raises the surface pH and drives the Maillard reaction hard, producing that deep mahogany crust and distinctive flavour. It is also used to cure green olives and to process cocoa.

Is E524 safe?

That is the important distinction: the hazard belongs to the handling, not to the food. EFSA permits it as an acidity regulator with no numerical intake limit. Commercial pretzel making uses proper protective equipment for exactly the handling reason.
