PGPR makes molten chocolate flow more freely, which matters enormously in manufacturing: thinner chocolate coats moulds evenly and runs through machinery without clogging. Its commercial appeal is straightforward, because it lets a maker cut expensive cocoa butter and still get a workable chocolate.
What it is made from
Made by reacting polyglycerol with ricinoleic acid from castor oil. The castor oil side is reliably plant-derived. The glycerol side carries the same origin question as E422, though most PGPR production uses plant-derived glycerol.
Vegan, vegetarian, and halal status
PGPR is normally suitable for vegan, vegetarian, and halal diets because both starting materials are usually plant-derived. Strict certification checks sometimes look at the glycerol source, which can in principle vary. Certified products have already resolved this.
Is E476 safe?
PGPR is permitted in the EU, UK, and US, with use restricted mainly to chocolate and similar products. EFSA re-evaluated it in 2017 and set an acceptable daily intake of 25 mg per kg of body weight per day, concluding exposure was well below it.
