What E385 actually is
EDTA grabs onto trace metal ions and holds them, which stops those metals catalysing the reactions that turn mayonnaise rancid, brown a cut avocado, or fade the colour out of a canned vegetable. It is used in very small amounts, typically under 100 parts per million, because a little goes a long way.
What it is made from
Manufactured synthetically from ethylenediamine, formaldehyde, and sodium cyanide, then combined with calcium. None of those reagents remains in the finished additive. There is no plant or animal input at any stage.
Vegan, vegetarian, and halal status
Fully synthetic with no animal-derived input, so it suits vegan, vegetarian, halal, and kosher diets. The calcium in the name is a mineral, not dairy, which is a common confusion. It contains no milk.
Is E385 safe?
EDTA is permitted in the EU, UK, and US. EFSA set an acceptable daily intake of 1.9 mg per kg of body weight per day when it re-evaluated it in 2018 and concluded exposure was below that for most people. The calcium disodium form is used in food specifically because it does not strip calcium from the body the way the disodium form can; that distinction matters, because the disodium form used medically for heavy metal poisoning has caused harm when the wrong salt was given. In food, the calcium form is the permitted one. At the levels used, absorption is low and most of it passes through.
