What E175 actually is

E175 is real gold, beaten into leaf or flakes thin enough to be applied to chocolate, cake, and drinks. Its entire function is visual. It contributes no flavour, no texture, and no nutritional value whatsoever, which is unusual even among decorative additives.

What it is made from

Refined metallic gold, at least 23 carat for food use so that it contains no meaningful quantity of other metals. It is mineral in origin with no plant or animal input.

Gold is a refined metal and suits every dietary requirement. Note that some gold leaf products are backed or bulked with other materials, and gold-coloured decoration that is not E175 is usually aluminium or a coloured coating, so the label is worth reading if it matters to you.

Is E175 safe?

Gold is chemically inert, which is precisely why it is permitted. It does not react in the digestive tract, is not absorbed, and passes through unchanged. EFSA has not set a numerical intake limit. The food-grade purity requirement exists to exclude other metals that would not be inert, which is why cheap decorative gold not sold for food should never be eaten. In 2016 EFSA noted a data gap on potential nanoparticle content in gold leaf and asked for more information; the additive remains permitted.
