What E160b actually is

Annatto is the reason cheddar ranges from pale yellow to deep orange. The practice started in England, where cheesemakers who had skimmed the cream off added colour to restore the golden look of a full-fat cheese. The habit stuck, and it now defines what cheddar is expected to look like in many markets.

What it is made from

Extracted from the seed coating of the achiote tree, native to tropical America. Bixin is the fat-soluble form and norbixin the water-soluble one, which is why the label sometimes names them separately.

Annatto is plant-derived and suits every dietary requirement. Cheese itself raises a separate question for vegetarians, because animal rennet is common, and that is unrelated to the colour.

Is E160b safe?

Annatto is approved in the EU, UK, and US. EFSA re-evaluated the annatto extracts in 2016 and set intake limits for the individual forms. It is one of the few natural colours with documented allergy reports: a small number of people react to it, and it has been implicated in urticaria and, rarely, more serious reactions. That is uncommon but real, and it is worth knowing for anyone with unexplained reactions to cheese or snack foods.
